They're not edible. They smell nice, though, and the proper use is to hang them in a room to perfume the area.

I know a number of chefs who slice them thin and candy them for garnish/flavoring.

They can also be candied, much like candied orange or grapefruit peel. In fact, I can state with authority that candied Cthulhufruit (http://www.txtriffidranch.com/projects/cthulhufruit.html) tastes much the same exact way that they smell, and they're delicious that way.
